Instructions:

(*) for a 4-person household Cut beef and bacon into cubes, freeze in freezer for 4 hours. Freeze the sausage fat as well.

Put beef and bacon through the middle disk of the meat grinder.

Grind beef with ice (I) around hand mixer or with blender.

Add bacon, ice (Ii) and pickling salt to beef form, blend until homogeneous.

Turn frozen sausage fat through the fine disk of the meat grinder and mix well with the meat.

Fry onions in clarified butter until translucent, cool. Add the remaining ingredients to the sausage meat and grind again.

Season again, add salt to taste and fill into sausage casings.

Cook the sausages in salted water for 35-50 minutes, depending on the caliber.
