Fennel Salad with Smoked Salmon and Shrimp

Pluck the green from the fennel bulb, chop finely and set aside. Halve the bulb lengthwise and then cut into fine noodles. Also finely chop the leek and boil it with the fennel in boiling salted water for about 1 minute. Drain the water, mix the vegetables with orange juice, olive oil, honey, vinegar, salt and pepper. Let stand for about 1 hour and only then add the fennel greens and season with salt and pepper if necessary. Mix yogurt with ketchup, season with whisky, salt and pepper. Mix in the crab meat and let it pickle for about 15 minutes. Place fennel salad on plates and serve with crab and smoked salmon strands.
