Instructions:

For the festive birthday cake, first prepare the chocolate base. For the chocolate base, beat the egg whites with a little sugar until stiff.

Beat the yolks with the remaining sugar until foamy. Add the softened chocolate by the spoonful. Sift in flour with baking powder and gently fold in with beaten egg whites.

Pour into a cake ring and bake at 150 °C convection oven for 25 minutes.

For the sponge cake layers, beat the egg whites with a little sugar until stiff. Beat the yolks with the remaining sugar until foamy. Sift in the flour and carefully fold in with the beaten egg whites.

Spread on 2 baking trays and bake together at 150 °C convection oven for about 15 minutes. After baking, roll up like a sponge cake roll and let cool.

For the cream, mix the custard powder with a little milk. Heat remaining milk with sugar and chocolate and cook a pudding.

It is best to stir cold or cover with foil so that there is no skin. Cream room-warm butter with sugar and stir in pudding by the spoonful.

Cut the chocolate cake layer in half. Place one half in a cake ring. Spread with a little cream. Cut each roulade lengthwise into 5 strips of equal width.

Spread with cream and wrap. Place next strip and wrap with cream until “snail” is as big as chocolate layer. Spread cream on top and finish with chocolate base.
