Pasta Dough

Mix the wheat flour and durum wheat flour. Mold the remaining ingredients into the center and quickly knead everything together into a smooth, firm dough. Cover and rest for 1 hour.

Fettucine

Using a pasta machine, make narrow ribbon pasta (fettucine) and dry a little on a floured surface.

Pesto

Rinse and pat the basil as well as the parsley. Lightly toast the pine nuts and finely chop or whisk them with the herbs and garlic. Put everything in a suitable baking dish and mix in the olive oil. Add the grated cheese and season with salt and freshly ground pepper.

Comments
