For the filet americain, cut the filet into thin slices, lay them on top of each other and cut them crosswise very small and fine or use the blender.

Then mix the egg yolk, mustard and oil to make a mayonnaise, add pepper and salt. Cut the shallots into small pieces, then mix the meat with the shallots as well as the mayonnaise and season with ketchup, a squeeze of lemon juice, salt and olive oil.

To serve, place the filet americain on the platter/plate using serving rings.
