For the filled pancakes with mascarpone cream and fresh fruit, first prepare the dough: Mix all the ingredients for the dough well until you have a creamy liquid mixture. Set aside and let rest for about 15 minutes.

Bake 3 to 4 thick pancakes from the dough and let cool.
