For the fillet of beef in puff pastry, fry the fillet in oil, rub with salt and pepper.

Place thawed puff pastry slices on top of each other, roll out to a rectangle (45×300 mm). Wrap the cooled meat in it, brush seams with egg white and press them together.

Place on a baking tray and bake at 200° C for 60 minutes.

Brown flour in butter, add beef broth and bring to a boil. Season sauce with nutmeg, Madeira, salt and pepper.

Serve the beef fillet in puff pastry with the sauce!
