For the filet variations Stroganoff cut the meat into cubes, onion small, peppers in strips, champions in slices and gherkins in thin strips. Chop the garlic.

Sear the meat one by one in hot olive oil and keep warm. In the same pan, sauté onion until translucent, gradually add peppers, champions and garlic and sauté for a total of about 20 minutes.

Pour in the vegetable soup. Add mustard, pickles, ginger, curry, tomato paste and pepper and simmer for 15 minutes. Mix sour cream with cornflour and 2 tablespoons of water until smooth. Mix to the sauce and simmer for another 15 minutes.

Stir any escaped meat juices into the sauce and season with salt. Add the meat to the sauce and let it simmer for about 10 minutes. Serve the filet variations Stroganoff.
