Cut the fish into very thin slices with a sharp kitchen knife. Arrange fish with slices of two limes and sorrel leaves on serving plates.

Sprinkle with salt and pepper. Mix oil and juice of remaining lime and drizzle over fish. Refrigerate with lid on until ready to serve. (Approximately 125 calories / 523 joules per unit).
