A great fish recipe to make yourself:

Briefly stir-fry dandelions in oil. Remove and set aside.

Dip rice sheets in warm water, lay out on kitchen towel. Season fish, place in center of circles. Spread dandelion evenly on top, drizzle with wine and juice of one lemon. Wrap sides and roll in the rice paper. Steam in steamer basket for twelve to fifteen minutes with lid closed.

Serve with a cress sauce: Briefly dip cress in simmering water in a colander. Take out, cool and rinse. Drain well and crush. Stir through with boiled down cream and soup, season.
