I N F O Although it is common to combine several vegetables in a jungle curry, sometimes only one or possibly two go in. The dish below is an example of this. Alternatives to breadfruit include cucumber, jackfruit, squash, or possibly long green melanzani. Almost always, however, fresh green peppercorns are used for garnish perhaps as a reminder of the role this spice once played in Thai curries before the arrival of chilies.

Green breadfruit can be difficult to prepare. Its juice is sticky, foul smelling, and difficult to get off repeatedly. Nail polish remover helps a lot with this.

Peel the breadfruit. Remove seeds and cut flesh into 1 cm cubes – you need in about 250 ml. Boil in soured salted water and roll gently until just tender.

Heat oil or rendered lard and roast 2 heaping tbsp paste for several min over medium heat until fragrant enough to make you sneeze. Season with most of the fish sauce, leaving a tiny bit for seasoning at the end. Add fish and breadfruit, pour in clear soup and let bubble.

Add krachai, peppercorns and basil and season to taste.
