Instructions:

Cut cleaned runner beans into bite-sized pieces and boil in salted water until tender to the core.

Strain, rinse with cold water, drain and mix with oil. Add vinegar, finely chopped onion, salt and pepper. Stir in some vegetable stock or water and let steep for at least 1 hour, stirring several times.

Immediately before serving, sprinkle with finely chopped parsley or savory.
