For the green bean soup, clean fresh green bean, wash and boil in salted water. Strain (collect and save the water) and rinse in cold water. Then cut half of the green beans into fine noodles.

Peel and finely chop the onion. Wash the parsley and dill, shake them dry and pluck the leaves from the stems. Roughly chop the parsley, chop the dill very finely.

Heat butter in a frying pan. Sauté onion pieces, parsley and part of the dill in oil. Add flour and toast, then pour some fisole cooking water.Add the cooked whole fisoles and puree everything with a blender. Season with a squeeze of lemon juice, a dash of vinegar and the remaining finely chopped dill.

Pour in the remaining vegetable cooking water and allow to reduce slightly. Season with salt and pepper to taste and before serving the green bean soup, add the green bean cut into noodles as a garnish.
