For the brown bread, mix the two types of flour together well and place half of it in a large bowl. Make a well in the center of the flour mixture.

Mix the sourdough with half of the water and pour into the well. Mix with a little of the flour mixture and let rest, covered, overnight. The next day, mix the yeast with the remaining water, add salt and stir.

Now add this mixture to the dough mixture. Add the remaining flour mixture and knead everything into a firm dough. Cover the dough and let it rise again for about 3 hours.

Then knead again and place in a floured loaf pan. Let rise again for about 1 1/2 hours, then bake in a preheated oven at 200 °C for about 80 minutes.

Let the finished bread cool on a cooling rack.
