Mix the almond kernels well with the sugar. Add the egg whites, rose water and bitter almond oil and mix with a hand mixer for about 3 minutes, then knead with your hands until smooth. Cover and leave to rest in the refrigerator for 3 hours.

Knead marzipan with food coloring and cherry brandy. Then roll out to about 1/ 2 cm thick. Using an oval cookie cutter or possibly a kitchen knife, remove leaf shapes. Cut leaf veins with kitchen knife.

Cut walnut halves in half repeatedly, place 1/4 on each leaf, place marzipan flakes in paper cups.

Homemade marzipan is a delight. For those short on time, use ready-made raw marzipan, colored green with natural dyes, as a substitute.

France celebrates cheerfully
