French Bean Relish

For the green bean relish, wash the green bean under running water and pat dry. Cut away the tips and stems and pull off the strings. Cut into pieces about 2 cm long. Boil in salted water with a pinch of cooking soda until almost tender and quench in ice water, this way they keep their beautiful green color. Drain.

Peel and finely chop the onions. Heat the vinegar in a pot and simmer the onions in it for about 10 minutes.

Wash the lime with hot water, rub it dry and finely grate 1 tsp of zest. Squeeze the juice from the lime. Roast the mustard seeds in a pan without adding fat.

Now add all the ingredients except the green beans and the alcohol to the pickled onions and bring to a boil. Reduce heat and simmer for 20 minutes over medium heat. Now add the runner beans and simmer for another 15 minutes. The relish is ready when it has thickened slightly. While still hot, pour the green bean relish into prepared jars, drizzle a few drops of alcohol over the top, light and seal immediately.
