Instructions:

Shell the peas and cut the lettuce into fine strips. Heat clarified butter, sauté peas and lettuce. Add pepper, salt, sugar and water and sauté for another 10 minutes.

Chop chervil and tarragon leaves and add to peas just before the end of cooking time.

By the way: Did you know that clarified butter is obtained by extracting water, milk protein and lactose from butter?
