(*) For a medium cake pan (quiche pan) of 20cm length, enough for six people.

Cover the dish with parchment paper. Preheat the oven to 180 °C.

Cut the ham slices into small squares. Remove the rind from the Gruyère and grate finely. Finely chop the parsley. Put everything in a large enough bowl. Add flour and baking powder and mix well.

Mix eggs, heavy cream and mustard very well, then season with salt, pepper and nutmeg. Melt the butter and add it. Stir the mixture well into the ham mixture. Fill the dough into the prepared pie dish (quiche dish).

Bake the pie in the oven at 180 °C on the second rack from the bottom for about sixty minutes. Take it out and cool it down in the form.

To serve, remove the pâté from the mold, cut into slices and bring to the table lukewarm or possibly cooled with leaf salad.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
