For the fried bananas and lychee with rice, cook the rice according to package directions until tender, drain and set aside.

Peel the bananas, ginger and lychees. Remove the seeds from the lychees and cut the banana into small pieces. Crack the coconut and remove the husk from the flesh.

Heat some peanut oil in a wok and fry the rice in it. Deglaze with the coconut milk.

Add the fruit, ginger and peanuts. Continue to fry briefly, season with honey and lime juice.

Peel the coconut meat into thin strips with a peeler or grater.

Arrange in a bowl. Garnish the fried bananas and lychee with rice with the mint and coconut strips.
