Instructions:

For the fried cauliflower with tomato sauce, clean the cauliflower and place in a bowl of salted water for 30 minutes.

For the batter, whisk the egg vigorously. Stir in the milk and white wine. Add flour and 1 pinch of salt and mix until smooth.

Divide the cauliflower into florets and pre-cook in boiling salted water for 5 minutes. Then pat dry. Meanwhile, heat oil for deep frying.

Dip the cauliflower florets in the batter and deep-fry in the fat until golden brown. Drain on paper towels.

For the tomato sauce, peel and dice the tomatoes. Chop the onions and garlic and sauté in olive oil. Deglaze with 150 ml water and crumble in the bouillon cube.

Add tomatoes and tomato paste and simmer for 5 minutes. Season to taste with the spices and lemon juice and puree with a blender.

Arrange the fried cauliflower with tomato sauce on plates and serve immediately.
