Instructions:

For fried eggs with sauces, first peel the 8 eggs.

For the curry sauce, stir the mayonnaise with the whole milk yogurt and the curry. Peel the apple and grate it into the sauce. Peel the banana, quarter it lengthwise, slice it and fold it in. Season the sauce with salt and sugar.

For the pineapple sauce, cut the pineapple slices very finely. Fold in the tomato ketchup and grate in the ginger. Season the sauce with cayenne pepper and coriander. Heat the oil to 175 degrees.

Mix the raw egg in a dessert bowl. Roll the hard eggs in the flour, egg and shredded coconut in order. Press the breading well until smooth. Bake the eggs in the hot oil for 2 to 3 minutes until they are golden brown and floating, then bring the fried eggs with sauces to the table hot.
