Fried Plaice with Mustard Sabayon

Instructions:

1. rinse and dry the plaice. Sprinkle with juice of one lemon and season with salt. Turn them in the flour on the other side and tap off excess flour.

Rinse the potatoes and remove the skin. Clean the kohlrabi and remove the peel. Cut both into sticks. Remove the skin from the onions and finely dice them. Finely dice the bacon. 3.

Heat the oil in a non-stick frying pan. Fry the plaice on both sides at low temperature until golden brown. Now season with salt and season with pepper. Remove from the frying pan and keep warm. 4.

4. in the same frying pan, fry the potato sticks at the beginning. After about 5 minutes, add the kohlrabi sticks, onion and bacon cubes.

Meanwhile, fry until the kohlrabi is soft. Season with pepper and salt. Finally, sprinkle the parsley on top.

For the sabayon, whisk the egg yolks with the fish font and white wine over a warm water bath until creamy. Then remove the yolks from the water bath, continue beating and carefully add the butter and mustard. Season with salt and pepper. 6.

Arrange the peanut and vegetable sticks on four plates. Place one plaice on each of the greens. Top with the mustard sabayon and dress up with dill.
