First, in a suitable saucepan, bring salted water to a boil, dissolve the butter in it and pour in the cornmeal in a stream. Reduce heat and continue to simmer until all liquid is absorbed. Then place the pot in the oven preheated to 150 °C, cover and let stand for about 10 to 15 minutes. In between, loosen the mixture several times with a fork and turn it over. In the meantime, in a pan with as heavy a bottom as possible, fry the bacon, cut into small cubes, until translucent. As soon as the fat begins to settle, add the finely chopped onion and let it brown briefly. Sprinkle everything with grated cheese and stir well. Beat the lightly beaten eggs over the top and cook, stirring constantly, until they set and an omelet-like mass is formed. Turn this out and cut into quarters. On hot plates, arrange a portion of cornmeal in the center of each and arrange the bacon and cheese quarters on top.
