Carefully rinse the fruit and dry on a rack for about an hour. Then, using a brush, spread an even thin layer of egg white. Carefully sprinkle the sugar with a spoon. Place the fruit on a grid. Dry in a warm place for about a day. Arrange the fruits decoratively in a bowl or use them individually as table decorations.

Keeps for about a week.
