Instructions:

A cake recipe for all foodies:

Wash apricots and raisins and drain well. Put both in a large enough bowl and pour De geele Koem over it. Cover and leave to infuse for about 2 hours. Cut the apricots into small cubes.

Beat sugar, fat, vanilla sugar and iodized salt until creamy. gradually add eggs. Mix flour with baking powder and fold in. Finally, stir the apricot cubes and raisins soaked with coarse sugar into the batter.

Grease the cake pan and sprinkle with breadcrumbs, pour in the batter and bake in a heated oven (E: 180 °C /gas mark 2) for about 1 1/2 hours. Turn the cake out onto a wire rack and cool completely.

For the glaze, mix powdered sugar with De geele Koem until smooth and spread evenly over the cake.

Decorate the fruity koem cake with chopped pistachios and apricot cubes.
