This dish, which is quick and easy to prepare, is one of the favorites in downtown Bangkok. It is sometimes served together with a fried egg on long-grain rice.
Prepare chiles, shallots, garlic and peppercorns in a mortar to make a paste.
Heat a large frying pan over medium-high heat and pour in the oil. Add the garlic-chili paste and cook, stirring, for 1 minute. Add the chopped chicken, fish sauce and sugar and cook until the liquid is reduced. Fold in the basil leaves.
Serve as a snack with fried egg on long grain rice.
Serve as a main meal with long grain rice and a side dish.
