Have fun preparing this mushroom dish!

Maybe dry the meat. Put in a suitable bowl with spices, mixed mushrooms and red wine. Marinate meat in it for a few hours, preferably overnight.

Remove the skin from the onions and cut them into wedges. Clean, rinse and halve the mushrooms. Dry the meat and keep the marinade. Heat clarified butter in a saucepan. Roast onions and mushrooms in it until golden brown. Remove. Sear meat in brown fat until hearty. Season with salt and pepper. Dust with flour and sauté briefly. Extinguish with 1/2 to 3/4 liters of hot water and the marinade. Cover and steam for 1 hour. Add onions and mushrooms after 30 minutes cooking time.

Cook sparrows in boiling salted water for 12 minutes. Drain carrots. Heat fat. Steam carrots in it for 3 minutes until soft. Rinse parsley, chop and sprinkle on top.

Season the sauce with jelly and crème fraîche. Arrange everything.

Serve with pears stuffed with cranberries and parsley.

Drink: dry red wine.
