For the garden helper breakfast, it is best to boil the potatoes in their skins the day before. Peel the cooked potatoes and cut into slices. Heat clarified butter in a large frying pan.

Add the finely diced onions and sauté until translucent. Add the potato slices and sauté. Place the potatoes and onions in a large braising pan or casserole dish.

Fry the bacon in the pan until crisp and add to the potatoes. Beat the eggs and pour them over the potato mixture. Allow everything to set together in the oven at 180 °C for approx. 15-20 minutes. Garnish with herbs as desired.
