Ask your fishmonger to fillet the dorado. Cut fish into small pieces and chop with kitchen knife. Squeeze 2 lemons. Peel and finely chop onions. Peel and core cucumber and chop into small cubes. Rinse kitchen herbs and grind in hand blender.

Mix all ingredients in a large salad bowl. Salt, season with pepper and season with Tabasco. Season hollowed lemon halves with the tartar.

You can also arrange the fish tartar on a platter in the center and therefore drape around mixed salads with sherry vinegar= salad dressing. Bring to the table immediately.

You can also cook the sauce beforehand. Add the fish only at the end, because it becomes firm if it lies too long in the lemon marinade.
