For the ginger-chocolate fondue, chop the chocolate, mix with the cream. Over low heat, stir constantly until a smooth cream, mixing in spices and, at the very end, the liqueur.

Serve in the fondue vessel on the rechaud, dipping with the pear, apple and cake cubes.
