For the gingerbread stars, boil the honey, oil and cane sugar and let cool again. Stir in the spices, salt and eggs.

Sift the flour with the baking powder, mix with the nuts and knead with the honey mixture. Refrigerate the dough for a few hours.

Preheat the oven to 200 ÂșC.

Roll out the dough on a floured work surface and cut out stars. Place on a baking tray lined with baking paper and brush with an egg yolk and milk mixture. Bake for about 10 minutes.

Let the gingerbread stars cool and decorate with almonds or candied fruit.
