For the fish fillet in almond crust, first prepare the crust. To do this, mix the soft butter with the remaining ingredients. Roll out the mixture thinly between two sheets of baking paper and place in the freezer for 10 minutes.

Preheat the oven to 180 °C about 10 minutes before baking.

Wash and chop the lettuce and radishes into bite-sized pieces. Just before serving, marinate with pumpkin seed oil, tomato vinegar, chives and salt.

Mix the herbs with oil and spread on a baking sheet.

Salt and pepper the fish and place it on the bed of herbs. Cover with the crust and put in the oven for about 10-15 minutes (depending on the thickness of the fish).

Serve the fish fillet in almond crust with the leaf salad.
