Grate ginger and mix with black sesame seeds and sea salt. Toast this mixture slowly in a hot pan without oil until the sesame is fragrant but not burnt. Allow to cool and then grind finely in a mortar to make a gray powder. Fill into screw jars and use as aromatic sesame salt for seasoning dishes. Keeps for several months!
