Instructions:

Peel, quarter and core the apple. Cut into small cubes as well as the onion and sweat in butter together with the carrot and beet shavings.

Stir in curry, lemon zest and flour, fry briefly and pour in wine and stock. Simmer on low heat for about 20 minutes.

Peel, quarter and core the apple and cut into 3 mm cubes. Clean the liver and also cut into small cubes.

Puree soup with a hand blender and strain. Add crème fraîche and briefly bring to the boil again.

Meanwhile, heat some butter in a pan and fry the liver briefly. Add apple pieces and sauté briefly as well.

Serve soup in warmed plates or cups, add garnish and sprinkle with plucked marjoram leaves.
