For those who love strawberries:

Place goose legs in a large saucepan, just cover with water and bring to a boil. Add salt, 4 tbsp sugar, halved onions, bay leaves and spices and do everything together at low temperature for 2 hours.

Cool, preferably for one night.

The following day, skim off the fat with a skimmer and heat in a frying pan. Pour in the drained drumsticks, sprinkle with the remaining 2 tbsp. sugar and roast in the hot fat until golden brown all over.

Skim the clear soup, let it boil, thicken with the mixed cornstarch. Divide the finished drumsticks evenly on plates, ladle with the broth and serve with fried potatoes.

Boil down to the desired consistency. First brown the drumsticks in the frying pan, then roast them in the oven under the broiler until crispy.

Simple and great. Roast potatoes just as fried in goose fat.
