For the goose legs, rub the legs well with salt and pepper. Brown skin side down in a roasting pan, then turn to the other side.

Add peeled and coarsely chopped onions. Pluck marjoram from the stems and sprinkle over the drumsticks. Roast the drumsticks in the oven at 225 °C (gas 4) for about 2 hours. After an hour, turn to the other side so that the skin side is on top.

Pour off the fat. Add a little water from time to time, baste the drumsticks.

After 2 hours, remove from the roaster and keep warm on a baking sheet in the oven until the sauce is ready. To do this, puree the onions in the roasting stock.

If necessary, sprinkle in some more dark sauce thickener and bring to a boil briefly. Season with salt and pepper.
