Instructions:

For the gooseberry soup with yogurt foam, first mix all ingredients for the soup, blend well and pass through a sieve and/or straining cloth.

Pour the gooseberry soup into glasses no more than two-thirds full in pretty glasses. Refrigerate until ready to serve. For the yogurt foam, blend all ingredients until frothy and spread over the gooseberry soup.

Serve the gooseberry soup with yogurt foam immediately and ice cold.
