Strain the Gorgonzola through a fine sieve, mix with the curd cheese and season with pepper. Pour the mixture into a piping bag with a nozzle and pipe rosettes onto a baking tray lined with baking paper. Chill for one hour. Form into balls while still cold and roll half in the pistachios and half in the walnuts.
