Gouda Loaf with Broccoli Noodles and Hazelnuts

Remove the crusts from the toast and cut into small cubes. Cut the Gouda and zucchini into small cubes. Mix with salt pepper and eggs. Let stand for about 10 minutes. If necessary, add some breadcrumbs for better binding. Form small loaves and fry slowly on both sides in olive oil in a non-stick pan – drain on kitchen paper. Cook the pasta in salted water until al dente. Cut the broccoli into small florets and blanch briefly. Mix the pasta with the broccoli, butter and whipped cream, season with salt and chopped lemon thyme. Roast the hazelnuts in a pan in the oven at 190°C for about 8 minutes. Then rub off the skins with a tea towel. Coarsely chop the nuts. Serve the gouda with the broccoli noodles and sprinkle with the hazelnuts.
