Instructions:

Have the butcher score the rind into a cube shape.

Preheat the oven to 200 °C. Briefly rinse the knuckle of pork and rub it well with salt and pepper.

Place in an ovenproof dish with the halved, unpeeled onion, the butter fat and some water and roast for 2 to 2 1/2 hours. Turn again and again to the other side and baste with gravy.

Finally, crisp the stilt on the broiler under grill function.
