Instructions:

For the gratinated goat cheese with fennel salami on summer salads, first place the salami on a baking tray and roast in the oven at 160 °C for about 20 minutes until crispy.

In the meantime, finely chop the brown bread, rosemary and pine nuts, mix with olive oil, piment d’Espelette and honey and season well with salt and pepper.

Place the goat cheese on a tray with baking paper, spread the bread crumbs on top and bake in the oven at 160 °C top and bottom heat.

Pluck the lettuce from the stalk, wash well and pat dry. Peel the citrus fruits and cut them into thin slices. For the vinaigrette, mix well honey, vinegar and oil, season with salt and pepper.

Spread the salad with the vinaigrette flat on a plate and arrange the still warm goat cheese and salami on top. Serve the gratinated goat cheese with fennel salami on summer salads immediately.
