For the Greek Tomato Loaves, first peel the tomatoes and cut them into small pieces.

Also peel the onions and dice very finely.

Place in a large bowl and mix well with salt, pepper, finely chopped herbs and spices.

Now slowly, spoon by spoon, stir the flour into the mixture until a viscous dough is formed.

Fry the Greek Tomato Loaves, or “psefto keftedes” as they are called in Santorini, over medium heat, in hot olive oil until crispy on both sides.
