Clean greens, chop coarsely. Add to 2 liters of boiling water with meat, season with salt. Simmer on low heat for 60 min. Break beans into pieces. Remove peel from potatoes, cut into cubes. Remove pork rind from bacon, cut into cubes, fry in a coated frying pan until crispy.

Add beans, potatoes, a few sprigs of parsley.

Transfer everything into the saucepan. Remove meat from clear soup, cut into cubes and keep warm. Add clear soup to bacon and vegetables form, season with pepper, cook for 30 minutes. Remove peel from apples, cut into quarters, steam in one eighth liter of water with vinegar, sugar and cinnamon for 15 minutes until soft. Remove with skimmer, drain, add to soup with meat and season. Chop parsley, sprinkle on top and bring to table.
