A delicious fish recipe for any occasion!

Marinate catfish in shallow saucepan with lemongrass and oil.

In second saucepan, heat oil, simmer garlic and onions for 1 min. on low heat (be careful: garlic burns easily!), add hoi sin water, vinegar, sauce and chili paste and stir everything together. Slowly simmer on low heat for 10 minutes, perhaps thinning sauce a tiny bit. Grill fish fillets on heated broiler on both sides for 3 min. each. Portion fish, put sauce on top and sprinkle with spring onions and peanuts. Serve with long grain rice and vegetables cooked al dente.
