Season lamb chops and grill to perfection.
Tortellinis:
Prepare a ragu, add a little more flavor. Roll out the pasta dough with a machine and shape into tortellinis with the tongue ragout. Cook in salted water until al dente.
Sauce:
Cut shallot into brunoise and sauté. Dust with curry and sauté. Add the stock, cook briefly, add whipped cream and perhaps thicken. Bind (assemble) with pieces of ice-cold butter and season.
Vegetables:
Blanch bush beans in salted water, bundle with carrot threads if desired. Sauté the beans in butter, season with salt, pepper and savory.
