Remove the fins from the salmon and rinse it under running water. Drain and dry with a clean dish towel.

Prepare the marinade: Peel and slice the lemon. Rinse and dry the bay leaves, thyme and parsley. Pour the peanut oil into a deep dish, add the lemon slices, 1 crushed bay leaf and 1 thyme sprig.

Put the salmon in the marinade and turn it occasionally to the other side. The fish should marinate for 1 to 2 hours in the refrigerator.

Preheat the broiler. Remove the salmon from the marinade, drain a tiny bit, place on a plate and season with salt and pepper. Place on the broiler, broil each side for about 6 minutes.

Preheat the oven to 210ÂC. Prepare a generous piece of aluminum foil as follows: Brush with marinade, top with bay spice, remaining thyme sprig as well as parsley stem and place grilled salmon on top. Close the aluminum foil tightly and place it on a baking tray. Cook the salmon in the stove for 10 to 12 minutes. 6.

Remove from the heat, open the aluminum foil and remove the salmon skin. Cut the salmon into thin strips and bring to the table with bearnaise sauce.
