Instructions:

Rinse the stilts under cold running water, dry them and rub them well with salt, pepper and garlic salt. Place the roasting rack of the microwave combination oven on rack level 2 of the cold oven, the pan with splash guard on level 1. Place the stilts on the roasting rack, switch the convection grill to 200 °C, add the microwave at 180 watts and roast the stilts for about 20 minutes, then turn them to the other side and continue roasting for another 60 minutes at 90 watts. Sprinkle the stilts with a little bit of water. At the end of the roasting time, continue to roast the stilts for about 15 minutes without microwaving, turn them to the other side as needed and keep the cooked stilts warm on a heated plate covered with aluminum foil.

Deglaze the pan juices with beef broth, orange juice and sherry, pour through a sieve, season with grated orange zest and offer with the veal shanks.

Garnish: Ratatouille and pistachio rice.
