For the punch ice, put red wine with currant juice, pomegranate syrup, rum or arrack, mulled wine spice, and sugar in a saucepan, bring to a boil, and boil down uncovered over medium heat to about half in 10 minutes. Pour mixture through a fine sieve, let cool slightly. Stir in butter.

Beat egg yolks in a whisking bowl. Add punch mixture, stir until smooth and whip over hot water bath until creamy. Chill ice cream mixture in ice-cold water bath and chill in refrigerator for 30 more minutes.

Place ice cream mixture in ice cream maker and freeze until creamy and firm in 45-60 min. Serve immediately or put in a lidded freezer box and place in the freezer.
