For the halloumi vegetable cube with bacon, first wash the zucchini and melanzani and cut off the ends. Cut lengthwise into slices about 5 mm thick. Place the slices one by one and salt them a little on both sides, wait for 10 minutes and dab off the resulting water.

In a pan or on the grill, sear the vegetables on both sides and set aside.

Cut halloumi into square slices and fry them as well. Season everything with chopped rosemary, thyme and pepper.

Lay a slice of melanzani with a slice of zucchini across it, place a piece of halloumi in the middle on top, fold the melanzani over it. Place another piece of halloumi and fold the zucchini over it to form a cube, and wrap it with breakfast bacon all around.

Fry the halloumi and vegetable cubes with bacon on the grill (or in the oven at 200 °C) for about 10-15 minutes until crispy all around.
