For the ham and cheese potato pancakes, first peel the potatoes raw, grate and drain. Add eggs and a little flour until a smooth dough is formed. Add ham, cheese and cream and a little parsley to taste, mix everything together, salt heavily.
Heat oil in a pan, form patties from the dough, fry them in the oil on both sides until they are crispy brown.
For the chive sauce, simply mix sour cream with chives and add a little salt if necessary. Serve the ham and cheese pancakes with chive sauce.
